Ajapsandali is an invention of mountain shepherds. They scorched eggplants over a fire, and then mashed these vegetables into a puree, mixing in herbs and hot spices; the resulting paste (adjap) could be stored for quite a long time; shepherds were given the opportunity to dine directly while the herd was moving.
